How much sweetener do you think would be required instead of honey? Im thinking of using monkfruit/eryth but not sure how it would react to freezing.
I use 1/2 cup cottage cheese, 1/2 cup frozen sliced strawberries, 2 TBSP allulose or monk fruit blend, 1-2 TBSP of cream or half and half to help blend the frozen strawberries!!

@Haydn Barker you’re so welcome! I also made a coffee flavored ice cream by using 1 cup of cottage cheese and adding 1 TBSP of instant coffee, 2 TBSP cream, the sweetener and a splash of vanilla. I had to freeze this for an hour or so but just til it froze about an inch around the edges and I could stir it up like soft serve. Mmmmmmm
I think adding allulose keeps it soft.
I’ve tried this recipe using whole fat cottage cheese and fresh raspberries, no sweetener. However, when I took it out of the freezer it was rock hard and took 4 hrs to defrost and when it did it did not have ice cream texture. Not sure what I did wrong.

What is even more awesome, is to use 1/2 cup FROZEN strawberries, 1/2 cup cottage cheese , 2 TBSP sweetener(or to your taste), 1-2 TBSP heavy cream or half and half(to help blend frozen strawberries)

Mascarpone cheese would work too because it’s used in tiramisu and can be sweetened since it’s a little more neutral. And definitely need full fat because fat is our friend on low carb or keto. Unsweetened cocoa powder would be good too for chocolate covered strawberry vibes. 🍫 🍓

I use chocolate whey protein powder and peanut butter powder with my cottage cheese plus chocolate fudge coffee syrup for the sweetener and I keep it in the refrigerator and eat it as pudding because it does get rockhard in the freezer
