  1. I do something similar with hunks of pork and some Herdez green salsa….throw in a pot and let it simmer on low in the oven for a while….super easy puerco verde, just add queso fresco and cilantro at the end

    • @Johanna Dones i roasted up veggies peppers, onions, and zucchini. I always roast a bunch of veg for the week and use with different meals. Roasted cauliflower with garlic are my favorites

    Another easy dish I make that reminds me of this is…this is a single serving recipe…
    4oz chicken breast, 60 – 90g SALSA VERDE, 28g 1/3 cream cheese, I put a low carb Mission tortilla in the toaster oven cut up into strips & sprayed w 2 olive oil sprays) for 4-5 min until golden brown and crispy. Also delicious!
