I love the red bell pepper sandwich but not for a top AND bottom. More like an open face sandwich with one half of the pepper.

I really liked the idea of using the red pepper as a sandwich. I also like the cucumber cottage cheese & feta. The only one I wouldn’t do would be the jalapeño, spice & I don’t get along. So to make this without spice, I will use the little baby sweet peppers. I’ll cut them in half lengthwise scoop out the ribs & seeds & put in the yogurt based artichoke & spinach dip & pop those in the air fryer. All of these are so quick, & I love that too. Thanks so much!
Everything looks great! Fun video. I’m pretty sure I’d wind up wearing more of the bell pepper sandwich, than eating it! Maybe as an open-faced instead, with equal amounts on both sides. Very cute outfit, love the color. You wear it beautifully, and are an inspiration in many ways. 💗

If you don’t like jalapeños, try it with eggplant or portobello mushrooms and used spinach dip. On the cucumber boats you can add tomato and red onion, it makes it even better!

For myself, I usually put all the fixings in a roasted bell pepper. It comes out so yummy that I don’t feel like I’m missing out.🌮🌮🌮
