Great points! The only thing I would question have to do with the veggies. Spinach is high oxalate and in large amounts can cause kidney stones among other problems. Broccoli has anti-nutrients that can damage the thyroid.
I think broccoli can be okay if cooked vs raw.

I agree veggies add flavor and color to meals. But if you look at their nutrient profile closely they’re so low in many vital vitamins/minerals except for some electrolytes and fiber. Not to mention a lot of them are full of oxalates, lectins, phytic acid and other anti-nutrients that prevent you from actually absorbing nutrients on top of causing multiple issues (GI, autoimmune, hormonal) in sensitive people.
Not saying that stop eating veggies (I actually eat some veg from time to time) but it’s important to know that animal products are the key for nutrient dense meals and healing your overall health regardless of the calorie and fat content they have. Animal fat is so healthy and vital people need not to be scared of it.
