What the heck is sugar free Honey made out of?😮
The one she uses still technically is sugar but more so natural rather than having the typical added sugar to the honey.

Mayra is using one from ChocZero (which I just noticed, from her description), sweetened with monk fruit. It tastes a lot like honey, but I can’t tell you what else is in it as whoever printed this label must’ve trained at an insurance company (the print is so tiny). It came as part of a bundle I got earlier this year.
Real honey is just honey with no additives. Unfiltered honey is better for you.

Add more sweetner, and you’ve got an Angelfood cake.
Bake it in a loaf pan. When done, rest the loaf pan upside down with sides on something higher till cool. That might stop the bread from deflating.

I would just use egg whites and substitute cream of tartar for the honey to taste more like bread and not so dessert-esque, and also double the size to counter the shrinking
I think you need Honey to get that nice brown color on the outside.

I make keto lemon curd and always need to think of ways to use up the egg whites. Lemon curd is mostly egg yolks. The combo of this bread and lemon curd would be amazing for an occasional breakfast treat!❤

This is basically angel food cake. Cream of tarter will help it keep shape and not deflate.
