A few months ago this cottage cheese and egg mixture was being called flatbread. I tried it and it was good. It had the texture of an omlet which worked great as a breakfast item. As a pizza crust? A bad imagination.
Same thought… Maybe if you added the mozzarella to the blender and did a hybrid fat-head dough you may have something. 2 Tablespoons of almond flour would probably give the missing chew. Bake it THEN add more cheese and toppings.

I can’t wait to try this. Pizza has been hard for me since most keto crusts are so high in fat and calories. Almond flour crusts are a bit high in carbs as well. This is everything I need. 🎉
