I put six bulbs of garlic peeled in raw honey and if I feel yucky I use that.. mix that with a little olive oil for dressing. Let the honey and garlic ferment. š Works great..

you need to crush garlic for the benefits.. just smash the bulb before putting it into honey.. or chop.. you need to damage the bulb.. “Crushing or chopping garlic releases an enzyme, alliinase, that catalyzes the formation of allicin, which then breaks down to form a variety of healthful organosulfur compounds” …also eating it fresh is better since: “Sulfenic acids spontaneously react with each other to form unstable compounds called thiosulfinates. In the case of alliin, the resulting sulfenic acids react with each other to form a thiosulfinate known as allicin (half-life in crushed garlic at 23Ā°C is 2.5 days)”… even before cooking: “Crush, chop or mince garlic and keep it away from heat for 10 minutes. During this time the maximum allicin is created and stays intact during cooking. You can then fry, saute, bake to your heartās content and still get all its medicine.”

Began my keto journey in 2018 because of Fatty Liver – Began by drinking kale smoothies and eliminating sugar completely. Lost a lot of weight. This past year, I have seen myself get lazy about it (life stressors) and allow things back in. I gained some of the weight back and could really feel it around my middle section. Two of my favorites! Fresh Pico de Gallo and what they call Provencale in Brazil and Portugal: Chopped fresh or dried herbs, onion and garlic covered in olive oil (or avocado oil). I always keep a jar of Provencale going in the fridge. Both Pico and Provencale are delicious and both go well with almost everything! Omelets, salads, pizza, meat, chicken, fish, veggies, cheeses. Provencale: 1/2 cup very good olive oil
1 medium onion, finely chopped
4 cloves garlic, minced
2 tablespoons Herbes de Provence (or a mix of fresh or dried thyme, rosemary, basil, and oregano – or your favorites, have fun and experiment)
Salt and pepper, to taste. To cook: Gently heat the oil and saute the onion until translucent about 5-7 minutes on Med/Low, add garlic for 1-2 minutes. Remove from heat and stir in fresh or dried herbs. Transfer to a jar and keep in the fridge. Spoon over everything. Keeps about 2 weeks, but probably won’t last that long. Enjoy! š
