BEST KETO POTATO SALAD EVER! How to Make Keto Potato Salad for Thanksgiving Dinner! Only 3 Net Carbs

Recipe:
3 celery sticks
2 head of cauliflower (or 2 bags)
5 boiled eggs (you can use less if you want)
¼ cup red onion
1 cup mayo
1 large dill pickle
1 tbsp yellow mustard
1 tablespoon of sourcream (optional)
Salt and pepper to taste
½ tbsp sweetener or 2 drops stevia
(optional)
Paprika and Cayenne pepper on the top
Topping: 1 Stalk of green onion diced
Nutrition per serving (for 10 servings)
3g net carbs
6g total carbs
3g fiber
19g fat
5g protein

Oooh please save the cauliflower leaves and cores for homemade stock! Or even chopped up fine and sauteed in butter for a delicious side dish. Even better with bacon bits, and you can use the bacon grease. No food waste! 🙂
Totally agree I don’t waist any part of the cauliflower. Sauté leaves and core yummy!

We really do NOT need to throw away ANY unused food that are called “scraps”.
Soups and stocks are delicious.
That’s when I toss everything into my Instant Pot and allow it to cook down into the soup or the sauce.
When I make Tomato sauce, I use minced veggies that cook down to invisible, but, the flavor and the nutrition is there in the sauce and it has texture and flavor and highest nutrition.
Think of the millions of gallons of vegetable stock that has been thrown away as “scraps” and all of the COLLAGEN that got thrown away in bones instead of being cooked down into bone broth for the flavor and the nutrition!!
Our ancestors did not throw away ANY FOOD.
I’m not big on eating chicken feet but, someone else can eat them…. I’ll be glad to drink the broth though that cooked with the chicken feet in it!!😆
YES! people are sleeping on FREE FOOD when they don’t use cut off and meat bones to make stocks and bone broths! Especially when we make rotisserie chicken! SO SO GOOD, and so good for you!! Best keto soup base as well

I add zest of a lemon and a good squeeze of lemon juice, chopped garlic chives and fresh mint as well because it gives it a nice little kick. Also freshly cooked crispy bacon. So good!!!
Thanks for the “potato” salad recipe. I added a can of tuna to boost the protein. I serve it over a few leaves of lettuce and of course 2 slices of pickles. Yum!

I’ve just recently discovered your channel. I made this recipe tonight and love it! I did add some crispy bacon, paprika and cayenne to it and it came out delicious! I’m looking forward to trying more of your recipes and will definitely be recommending your channel to others.
The middle of the cauliflower is the core or the center which is also edible and can be used to make vegetable stalk. You can add, carrots, celery, onions, and garlic, with salt, pepper, and whatever other seasonings you would like to add to make a flavorful vegetable broth and/or soup.
I used your idea here to substitute cauliflower for my mom’s family PS recipe..it was a big hit..no carbs…no leftovers…also I make my own mayonnaise now too. Everyone should try 1 cup MCT OIL, one egg, dry mustard and salt, either lemon juice or vinegar. Waaaay healthier than store bought
I just tried this salad From your website and was scared to death to make it because I was afraid I was gonna have to throw it out but it is absolutely on unbelievable in taste Absolutely delicious fantastic everybody’s Needs to try this seriously
First time I made the “Potato” salad I boiled it, BUT the second time I made it I steamed the cauliflower and it was WAY better then boiling. Thank you for the recipes!!!

@Carrie B I can’t even imagine boiling a veggie…I keep the pieces large…maybe 5-6 pieces for large head. I only use a few Tbsp of water, cover, cook on medium about 5 min…done! I think boiling is why ppl don’t like veggies. The remaining water, if there IS a tsp or so left, can be poured back on the veg so no nutrients or flavor are lost.
I like to pressure cook something like cauliflower.
@spirals 73 Ugh! Steam with just a few Tbsp water for about 4 minutes. If too form, replace lid. allow to stand a minute or 2 more, off burner. Will not release that toxic gas of overcooked cruciferous veggies!.

I just made this recipe today. It’s AMAZING! Even without the eggs it still tastes extremely close to potato salad. I topped with cayenne. PERFECTION! ❤
This is a fantastic recipe Mayra! Made it today for the first time. The only thing I changed was adding some parsley, some extra lemon juice and olive oil. I may also add some grated lemon zest to it if I don’t finish it before I get to do that! Looove you and your recipes!
This was so good and it tastes like the real thing. I steamed my cauliflower instead for about 10 minutes
7/7/22 – I made it for our 4th of July picnic. It was a hit! I used frozen cauliflower which I dry-roasted in the oven and allowed to cool completely before adding it to the salad. I think this helped to keep moisture levels low in the cauliflower.
I had weight loss surgery and I maintain a Keto diet. I could not even tell it was not potato!! I am known for my potato salad, people who hate potato salad love mine, I swear people invite me to BBQ’s so they can have it…lol, so this was HUGE!! I just made it exactly like I make mine….Cauliflower, Pickles, Egg, Mayo, Must, Salt and Pepper. So Yummy!! 💚Thank You!!
I always add the pickle juice to thin out the dressing. It always adds a lot of flavor also. Great recipe😘

Love this recipe. You use everything I use for my potato salad. I will be replacing my potatoes for cauliflower from now on. It doesn’t feel heavy like potatoes. My husband gave it two thumbs up which says a lot. Thanks for sharing your recipes.
