  2. For processed meat, that’s a tricky one. It’s well known that consumers of processed meat also often are consumers of the others offenders on the list. If the assumed offender in processed meat is nitrites and nitrates, well, vegetables are hundreds of times higher in those than meat. Celery, spinach, and beets can and have been used to “cure” meat. But if the assumed offender is the formation of nitrates and nitrites into nitrosamines because they are in the presence of amino acids, then it would be unsafe to consumer vegetables and meat in the same meal. Perhaps, antioxidants in vegetables prevent formation of nitrosamines. Or, perhaps the human gut does this on its own since our own saliva is very high in nitrates. Either way, most cured meats in the US are also treated with ascorbic or erythorbic compounds to prevent the formation of nitrosamines.

  3. It’s not the smoke point that indicate how well an oil resist oxidation you know that Siim. Otherwise you might as well fry with canola instead of coconut oil since the former have higher smoke point. Even high smoke point of avocado oil is inferior to evoo and coconut oil in resisting oxidation and producing more toxic compounds under frying.

    One thing need to be more stressed is the use of Round Up in growing the certain crops that get turned to oil.

  4. So sunflower oil is healthy to fry with? Olive oil and sunflower oils are on the same level?

    • No it is not. If you look at the fat composition of the sunflower, it is high in lineloic acid, ranging from around 44-75%. One of the main argument against vegetable oils is this high amount of lineloic acid or omega 6, which is depends on your research suggests different negative biochemical effect on the body, especially when it is in excess and the way it is produced through modern industrial process (look up how vegetable oils are created, involving hexane, bleaching, high temperature and pressure involved, since lineloic acid is already easy to damage these processes turn the oil rancid which is oxidated).

      So even the oil is in the store unopened bottle, it is already damaged. With a caveat, there is a high oleic strain of sunflower which have lower amount lineloic acid, but this is not to be trusted either if you don’t know how it is produced. If you have your own oil press that operate in low temperature, and you have access to organic high oleic sunflower seeds (not sprayed with chemicals, because sunflower is sprayed with Round Up (glyphosate) before harvest), then you can make your own high oleic sunflower oil. But I don’t see the point of spending more money for this oil when you can buy high quality extra virgin olive oil or coconut oil instead.

      Sunflower oil have the lowest oxidative stability among popular vegetable oils, even lower than canola.

  5. I have eaten fried chicken, duck and iguana cooked in tallow or lard. It h as not seemed to age me in fact I look younger than all of my friends close to my age.
