It takes a combination of foods, not just one, to create a healthy body. Today, we’re going to talk about an additional food you should add to your daily salads: carrots.
We’ve talked before about why you can have carrots on keto but haven’t gone in-depth on the health benefits of carrots.
One medium carrot has 4.3 net carbs and a low glycemic load, so having one carrot daily won’t push you out of ketosis.
Health benefits of carrots:
1. The fiber in carrots may help detox and balance estrogen
2. They lessen the activation of procarcinogens
3. They contain antioxidants
4. They’re antiangiogenic
5. They have anticlotting properties
6. They have properties that can help fight mycoplasma
7. They may help reduce intestinal inflammation

Organic produce farmer here. I grow around 5,000 per year. We eat 2-3 everyday. Fresh, because we grow them during the winter in a heated greenhouse; although they winter over EXTREMELY well outside. Just cut off almost all of the green tops and mulch them very heavily with straw, and cover that with a tarp. Actually they get sweeter after a frost or two.
YES! We grow our carrots and winter them in the ground, too, but be aware that that’s when more sugar develops; that’s why they’re sweeter. We tend to harvest them and store them in the basement now instead so they’re not as high in sugar content.

When I was a child, (6 decades ago) my parents and grand-parents used to say: “ An Apple a day keeps the doctor away”!
Yes…that was when apples were natural and not GMO to be too sweet. Apples have amazing health benefits as they were originally created. Now we’re all much better off with organic carrots, but 60 years ago people weren’t wrong to say that.
That was also used for the teeth..”keeps the dentist away”
The last apples I bought at the grocery store were so pretty and shiny. I placed them in a pretty bowl on the counter and 2 months later about half of them were still there. They looked as pretty and shiny as the day I put them there. That is not natural. The taste was horrible as well.
They were smaller and harder in those days, people had better aim and a well thrown apple would keep a pesky doctor from coming to the homestead wanting a fee for telling people to eat healthy.
I eat 2-3 (organic) carrots a day, grated and mixed with a whole diced avocado, grated (raw) beetroot, sauerkraut, extra virgin olive oil, raw apple cider and Himalayan salt. Sometimes I also mix some seaweed (wakame) and I also make combinations with other veggies or maybe diced hard-boiled egg. It is an everyday staple salad, and I love it.

@Lise Barrett Well perhaps it is more of an acquired taste – more so with seaweed —, like the pickled herring in Sweden. Such a degree of rawness is not commonly preferred, but one can easily get used to it.

I haven’t been sick for almost 13 years ever since Ive been consuming raw carrots. Both my parents were diagnosed with breast, lung, and prostate cancer years ago. Ever since they’ve been consuming raw carrots and raw vegetables, no signs of cancer. Doctors don’t want to know what they’ve been doing, they just say keep doing what you’re doing.

I’ve been wondering about that and beets. I’ve started intermittent fasting just over 8 weeks ago. 6’2” at 210 now from 225 male 66. When I did 48 or lately a 36 hr fast my ketones got really high like well over 7 almost 8. Glucose early on was 100 ish now 90is and the last fast of 36 it got in the 70s but ketones were way high. I used to be a sugar eater big time. Cakes chocolate ice cream coke carbs. Now healthy keto. Second round of itchy skin. So I’m thinking many toxins to let go of. At some point I’ll be able to fast for longer than 48 or do a 36/12 for a week without the ketones getting so high. I’m putting carrots back in my salads. Maybe kick down the ketones first then do the longer fast.
High ketone are good. Our brains love ketone.

I’ve been drinking organic carrot juice for two weeks now and I can feel that it does something good to my body. I can’t explain how but now I know after I watched this video. I should eat raw carrots but the organic carrot juice 8 fl oz daily is still better than no carrot at all. Thanks for the video.

Carrots celery kale and blueberries has been my staple in the beginning of my health journey. Adding the carrot has proven to enhance my vision, so much so, my drivers license corrective lenses has been removed. Passing the vision test without eyeglasses for the first time in over 20 years seems unreal.

Wow, i’m happy to hear this! i feel validated. Depending on how big the carrot is, i put a part of it in my salad and the rest in my smoothie which is a mix of buttermilk, frozen kale, ginger, turmeric, olive oil, lemon juice, parsley sprigs and cuttings from green celery, especially the lower part which are very fivrous. And before i drink a glas of it i add 1 tbsp of ACV.
This video makes me so happy because i always make a salad with cabbage and carrots with olive oil as my dressing, i use to think it’s only the cabbage helping my hormones, now I’m happy the carrot also contributes😊😊😊
